Carrots are a good source of several vitamins and minerals, especially vitamin A (from beta-carotene), biotin, vitamin K (phylloquinone), potassium and vitamin B6.

Carrots are available all year round and can be used in savory dishes, cakes, and juices. Idli is one of the best option to add them in your meal.This helps boost the immune system and prevent disease. Vitamin C can help reduce the severity of a cold, and the length of time it lasts.

Ingredients:

  • Idly batter – 2 cups
  • Carrot - 1 grated
  • Tomato - 1 ring
  • Coriander  - 2 tbsp
  • Coriander for garnishing
  • Salt to taste

Method:

  1. Heat oil in a pan, add grated carrot & salt saute gently for a min.

  2. Heat water in an idli cooker. Grease the Idli plate with oil. Then place round shaped mould over the cavity

  3. Pour idli batter outside the mould by holding it. Now pour 2 tbsp inside the mould. Place sauteed carrots inside.

  4. Then place another small mould into it & place some chopped coriander.

  5. Cover lid & steam it for 10 min. cut off heat, Serve hot with coconut chutney.
